Anyone else LOVE a good ol’ fashion PB&J sandwich? As far back as I can remember I was eating PBJ sandwiches. My mom would wrap them in aluminum foil and write little messages on the top with a sharpie pen. I used to save those messages and loved opening them up when it was lunch time! Anyone also notice how much better they taste when your mom makes them? It has to be that magic touch! (Thanks mom :))

As I got older and wanted to cut back on carbs, I came up with this recipe to still get my PBJ fix! Although it’s not the same as a fresh made sandwich by mama, it still gets the job done!

  • 1/3 Cup cauliflower rice – frozen
  • 1/3 Cup berries (strawberries and blueberries)
  • 1/2 frozen banana
  • 1 spoon full of almond butter
  • 1/2 cup Bolthouse Farms Original Plant Based Milk
  • 2 scoops Arbonne Vanilla Protein Powder (any powder of your choice will do! I just love the vegan ingredients in Arbonne)
  • 1 scoop Vital Proteins collagen powder
  • 2 tbsp flaxseed
  • Handful of spinach
  • Add water if needed and BLEND!

Now sit back, relax, and enjoy nostalgia 🙂
