Who else LOVES them some Upbeet? If you are unfamiliar, Upbeet is a restaurant in Atlanta, GA that specializes in providing a variety of clean and healthy meals without individuals sacrificing nutrition for convenience. They offer salads, grain bowls, smoothies, smoothie bowls and much more! I love this place so much, I figured to help my bank account (I spend way too much there) I should try and create a similar bowl at home! Although it’s not the same, it definitely relieves some pressure on my wallet.

This bowl was created with things I already had in my pantry and fridge, leftovers from my meal the night before, plus some leftover Upbeet Lemon Vinaigrette (MY FAVE). Recipe is below!

1 Cup Cooked Quinoa

1/4 Cup Leftover Sweet Potato Purée

1/4 Cup Leftover Baked Brussel Sprouts

Spinach

Handful of walnuts, crushed manually

Half Avocado

Upbeet Leftover Lemon Vinaigrette

Heat up the leftover quinoa, sweet potato and brussel sprouts then add cold toppings. So filling, so nutritious and SO DELICIOUS!!
